As promised I am back with more of what happened on my birthday. If you missed the first part, here it is --> click here.




So my birthday didn't go as planned and we ended up officially celebrating yesterday (one day after). I had so much fun and didn't even think about what had happened the day before). We celebrated exactly how I was hoping we would. We spent the afternoon in the kitchen cooking Filipino Spaghetti, Garlic Chicken, and Roasted Liempo. I even managed to make a Ferrero Rocher Chocolatey Cake.


























While I was finishing up the cooking and cake-decorating, the Husband and Daughter prepared the dining table. This is the kind of life moments I particularly love and I hope that one day my daughter will be able to share these stories to her kids and grandkids.




As I was eating dinner, oh by the way we filmed while we were cooking the Liempo and I really hope I'll be able to upload it asap. It's my sister-in-law's recipe and it's sooooo good. I even prefer this over the Lechon Belly, although the latter is aesthetically more pleasing.


Anyways, as I was eating, I began to think about how much pressure I put on myself. After the Husband and I made up, I kept feeling so sad about not celebrating my birthday this year and I kept thinking about waiting one more year to celebrate and how far away that was. But the Husband tried to cheer me up and kept saying that we could do it another day. I kept repeating that that wasn't possible because it wasn't my birthday day anymore. But he just kept insisting. And I'm glad he did.




I'm not sure if I've always been this uptight about things, but ... it doesn't have to be that way. It's ok to celebrate your birthday the day after or any other day you prefer. It's ok to not always be on top of things. It's ok to delegate tasks to others. And it's definitely ok not to aim for perfection every time.




This is something that I would like to work on myself which I've actually started. The Ferrero Rocher Chocolatey Cake I made for myself was really good, but man look at that design. Hahaha. Good ol' me would probably have dumped this one out, but new me said "why miss out on a delicious cake just because it doesn't look like it came from a cake shop?"
