Baked Sardines in a Can

Hey, you! It's Day 8 of the lockdown and I am tired. Not from staying at home, but it's more of a mental exhaustion. As you know, my husband works in the medical field, so he's obviously out there every day. As soon as he steps out of our front door, I worry for him. I also worry for my family and friends. I hear about what's happening in Italy at the moment and it brings tears to my eyes. I feel hopeless and helpless.


Thankfully, I have friends that are really helping me keep my head up. Especially one friend. We met here in France and we've been friends for a while. But I feel that this has really brought us closer. She's as heartbroken about the situation as I am and even more. For her, I try to my absolute best to be as positive-minded as possible. That's the kind of friend I am and want to be.


Keeping with the positive attitude, I thought I would share with you a SUPER easy recipe I've been making for busy days. Nowadays, because I work from home, lunch time is really tight. But I do have to prepare something because there's Baby Girl with me. So sometimes I re-heat leftovers, but if this isn't the case then I have my Baked Sardines in a Can.


I always have cans of sardines on-hand. I usually eat them out of the can or in a sandwich with butter and onion. Then one day, I came up with a great alternative which as I mentioned quickly became a back-up plan for a quick meal.




Baked Sardines in a Can


You will need:

-a can of sardines in oil

-breadcrumbs

-garlic powder

-salt

-black pepper

-lemon juice



Start by opening a can of sardines in oil. Discard a tablespoon of oil. Smash lightly the sardines with a fork. Sprinkle the top with breadcrumbs and season with salt and black pepper.


Bake in a 180 degrees Celsius preheated oven for 10-15 minutes. (I make sure to use a baking platter / dish to put the sardines can on top to avoid oil spilling all over the oven)


Remove from the oven. Press the juice of half a lemon.
