I apologise but you're gonna have to waittttt just a little bit longer before I write about the restaurant we ate at in our recent Paris trip (click here for the post). I just had to absolutely share my Cold Rice Salad recipe first.
The first dish I ever made in my life was a Cold Rice Salad. I was about 7 years old and my parents and I were living just outside of Paris. I remember looking at my dad's old cookbooks for inspiration that day until I stumbled on a cold rice salad recipe. It was perfect! My Filipina mom would be happy because well ... rice. No explanation needed. 😁 I knew my French dad would like it too because he loved salads. Everything was going well until ... I started cooking.
I remember being so proud of myself though and I immediately prepared one special plate for my mom and another one for my dad. But something was wrong. I could see it in their facial expression. I asked if everything was ok. I mean my mom was choking back tears and my dad's adam's apple was strangely moving in slow motion. But they assured me that everything was okay and that it was the best salad they had ever had and that they were so proud of me!
"Okay", I thought to myself before finally having a first taste of my salad. "Yuck! The rice is undercooked! This is the worst thing ever!"
I waited for them to say something but they never did. Strangely enough, mama was insistent on storing the leftovers for the next day. We never saw them again. Hahaha 😂😂
Years later when I looked back at this event, I realized that the greatest gift my parents ever gave to me was feeling their unconditional love.
That was the first and last time I ever made Cold Rice Salad until I moved back to France. I also remember my dad making this when we moved to the Philippines many many years ago butttttttt .... that's another story. Worth being shared in another post though. 😜😜
My sister likes making this for her family and I'm happy that she made me love this again. I, especially, love preparing this salad in the summer. I think it goes well with about anything. The Husband has learned to love it, although it's still not his cup of tea, but my daughter absolutely loves it! ❤️❤️
