I am officially going back to work this week. Truthfully, I worked a bit here and there this summer, but it was quite chill. It was nice actually, but there are some things I am looking forward to going back to. Like waking up earlier in the morning for example. I've always been a night owl. Sometimes I'll lie in bed late at night, eyes wide open, and my brain just won't stop working. Some of the best ideas I've ever had came to me in the middle of the night. But with the kind of work I'm doing, I've realised that it's better to transition to a morning person. But .... I don't really know actually because my creativity comes out at night and I also need that in my line of work. Perhaps I should find the right balance. One thing that irritated this summer though was waking up at 9am, working at 10am, and then barely 2 hours in having to stop whatever I was doing to prepare and have lunch. Alone, I probably would have skipped it or had a super late lunch, but I can't do that to my daughter.
Anyways, being back to work also means back to weekly meal plans. We were everywhere and anywhere this summer, so there wasn't much meal planning . But here we go again!
I don't know about you, but I find myself not cooking a lot during summer. I usually just like a quick salad or sandwich. A lot of fresh produce. Speaking of salads, this reminds me that I recently posted an Instagram reels for my Cold Rice Salad - I totally have to post the recipe here. It's super simple to prepare and comes with the cutest anecdote. Hahaha. For this week, I'm hoping to film the Seafood Pasta al Cartoccio. This is soooo good and one of my favorite pasta dishes ever! 😋😋
