I have been struggling with bad asthma the whole week - I don't sleep well, I'm coughing and wheezing non-stop, my body hurts, and I'm not as active as I would like to be. But there's not much I can do I guess except try to rest as much as I can. I was able to finish the whole "Pumpkin Spice series" (click here, here, and here), but I didn't have enough energy to make Pumpkin Bread yesterday and today. Perhaps I will tomorrow, but it will probably depend on how I feel when I wake up. But, don't let me get to you - I am feeling down at the moment but I will come back stronger from this I promise. 💪💪
Another exciting week of cooking is coming. I don't know if you've noticed, but we're getting quite good with our Meatless Mondays and Fish Fridays. I've also noticed that we have an adobo dish at least once a week. You can get the Filipino out of the Philippines, but not the Philippines out of the Filipino. Hahaha. As long as I have Filipino soy sauce and vinegar, I will continue cooking adobo at least once a week. Especially because there are sooooo many ways of cooking adobo. Each Filipino region has their own version and each is so delicious! I'm really hoping I will have enough energy to make Pandesal so I can finalize my recipe. I have to catch up with the work I set aside last week, but I'm really hoping my asthma will be better. I'm on week 3 already! Boo! Oh and by the way, before I forget, I made Chicken Enchilada Casserole for the first time last week and it was a big hit. I'll be making this again for sure!
