Vietnamese-Style Noodle Bowl | Recipe

One dish I especially love eating the summer is a Noodle Bowl (and sometimes a rice bowl or something similar). It's wonderfully refreshing - perfect on a warm day. And oh so versatile! Depending on what I have on-hand, I can make this with any vegetable and fresh herbs, fish, seafood, or meat I feel like having that day. Personally, I like it when there's a crunch from cucumber, freshness from herbs, and slight tartness from the lime.




This is pretty easy to make - the longest part would be preparing the vegetables. Peeling, slicing, chopping, and julienning. But once that's done, building your bowl is easy-peasy. By the way, I've received several messages on the tool I use to julienne my veggies. Here it is below. ⬇️⬇️




Actually, this isn't the exact Julienne Vegetable Peeler (https://amzn.to/3vjt0Hj) I use. I don't remember where I got mine, but the one above is the one I want to get once mine breaks. I love OXO products!
